I was recently searching for a good recipe for a leftover ham casserole when I stumbled upon a cheesy dinner idea in one of my old Amish cookbooks.

How to Make Leftover Ham Casserole

To make this delicious ham and noodle casserole, begin by preheating your oven to 350 degrees. Lightly spray a 13×9-inch baking dish with non-stick cooking spray. 

Next, in a large saucepan cook noodles according to package directions to al dente. Be sure to add salt to the water! Drain egg noodles and return to the pan.

Stir in the ham, chicken soup, sour cream, milk, garlic powder, and the pepper; stir well. 

Finally, transfer the creamy noodle mixture to the 13×9-inch baking dish. Sprinkle the 2 cups cheese over the top.

Bake for 25 to 30 minutes or until heated through. Garnish with fresh parsley.

I realize that these condensed soups are not really in fashion in today’s world—and I get it—but I still think that they offer a really simple way to bring tasty casseroles to the table for regular folks.

Homemade Substitute Cream of Chicken Soup

If you’d prefer to substitute, here’s my homemade cream of chicken soup.

Just melt 3 tablespoons of quality butter (I love Kerrygold) in a saucepan over medium-low heat. When melted, whisk in 1 tablespoon of flour until smooth.

Next, whisk in 1/2 cup of chicken broth and 1/2 cup of whole milk.

Whisking constantly, bring to a gentle boil until it thickens. Add your salt and pepper to desired taste, and you’ve got the homemade equivalent of 1 can of condensed soup.

Ingredients

  • 1 12oz. bag wide egg noodles

  • ยฝ teaspoon garlic powder

  • 2 cups shredded Monterey Jack cheese
  • Fresh parsley optional

Instructions

I used diced ham when shooting this recipe, but any leftover holiday ham would also be great.

  2. I made this. Definitely was nice and easy and fast to put together which is a plus. I also added some peas but I agree for me, it needs a little something more. I was thinking breadcrumbs possibly. I also have never used cream of celery. Can anyone tell me how that will change the flavor? All and all not bad and thanks for the recipeย

    I made this using leftover Christmas ham, added a can of peas and used cubes of frozen turkey gravy to make the โ€œcream of chicken soupโ€ because I didnโ€™t have the cream of whatever can I thought I did and also didnโ€™t have the leftover chicken broth I thought I had to make my own. I used your โ€œmakeย from scratchโ€ cream of chicken recipe as a guide with my frozen cubes of Thanksgiving turkey gravy and it came out delicious. I may never go back to cream of whatever soups again as long as I have leftover frozen gravy cubes hanging around. This will be new staple casserole in my toolbox, which I bet would be great with any leftover holiday meat!ย

    I made a few changes, I used a can of Campbell’s cream of chicken with herbs, a half cup of sour cream, and a scant cup of milk. I added seasoned salt and pepper for seasoning and about a cup and a half of chopped leftover spiral baked ham. I used kluski egg noodles and mixed in Irish cheddar that I had shredded. On top, I added a mixture of mozzarella and sharp cheddar as well as buttered panko crumbs. it’s so good that I ate the leftovers for breakfast!

  6. I made this exactly as the recipe called for, and added steamed broccoli for extra nutrition. and a pop color (didn’t have fresh parsley.) whole family loved it and my mom did too. served with honey glazed carrots for more “nutrition” lol

    I always make my modifications so I want to share….
    I made a bag and half of wide egg noodles
    Can of cream of chicken with herb (so good)
    half a cup of sour cream
    garlic powder, onion powder
    required measurement of diced ham
    I used mozzarella because I grab the wrong cheese
    peas carrot and corn (whatever veggie you like to taste)
    and I made it on the stove top and it worked perfectly!
    this is going on our dinner rotation โค๏ธโค๏ธโค๏ธ
